Wild Turkey Roast
- 1 wild turkey
- butter
- salt and pepper
- dry white wine
- stuffing
Clean and dress bird. Wash thoroughly and pat dry. Preheat oven to 325°. Stuff turkey with your favorite stuffing. Brush entire bird with melted butter. Sprinkle with salt and pepper. Place bird on rack in a roasting pan of adequate size. Roast, allowing 22 to 25 minutes per pound. Baste turkey often with equal parts melted butter and dry white wine. Wild turkeys have very little fat and will be dry without extra liquid. Low heat will also protect turkey from drying out. Wine will enhance flavor of game. Serve with traditional accompaniments.
